- 1 cucumber, chopped
- 2 Roma tomatoes, sliced
- 2 avocados, chopped
- 1/2 red onion, chopped
- 1/2 bunch cilantro, coarsely chopped
- 2 tablespoons olive oil
- 1 teaspoon salt or to taste
- 1/4 teaspoon ground black pepper
- 2 tablespoons fresh lemon juice
Avocado-Tomato-Cucumber Salad Instructions
- In a large bowl, add cucumber, tomato, avocado, red onion, and cilantro.
