Ingredients and spices needed to make Indonesian peanut sauce (gado-gado):
- Vegetables (e.g. carrots, lettuce, beans, tomatoes, cucumbers, etc.)
- boiled potatoes
- Rice cake (longong)
- boiled egg
- fried tofu
- Fried tempeh
- Tapioca Crackers (Krupuk)
- Peanut butter sauce
- 6 garlic cloves
- 1 teaspoon chili or paprika powder
- 1-2 tablespoons tamarind paste, or to taste
- 100 g coconut sugar
- 2 tablespoons salt
- 2 tablespoons of sugar
- to taste Ground white pepper
- 150 g natural peanut butter (no salt or sugar added)
- 500 ml coconut milk
- 100 ml water
- Note that:
- If you don't have peanut butter, use 200g roasted peanut butter.
- If you don't have coconut sugar, use granulated sugar.
Instructions for cooking Indonesian salad with walnut sauce (gado-gado)
- Chop/cut vegetables to taste. leave it aside
- Cut the remaining ingredients (potatoes, rice cake, eggs, tofu, tempeh) to taste.
- Preparation of peanut sauce: Sauté garlic clove until golden brown.
- Place the roasted garlic, chili powder, peanut butter, coconut milk and water in a blender. Mix everything together until smooth.
- Pour into a saucepan. Cook over medium heat.
- Add coconut sugar, salt and sugar.
- Stir until bubbles appear. Add marinara noodles.
- Keep stirring until it boils and becomes greasy. If it doesn't seem greasy, keep stirring and lower the heat. Be sure to taste and add sugar/salt/tamarind if needed.
