- Seasoning
- 1 - TBLS olive oil
- Juice of a small lemon/lime
- Salt and pepper
Steps to make a corn and avocado salad (VG, VEG)
- Salad: Cook the corn until tender - reserve on absorbent paper. In a pan, add the butter with a drizzle of olive oil (reserve the rest for later), wait for a while until it sizzles and add the corn, browning once. Remove to an absorbent paper and let cool completely.
- Finely chop the garlic, then add the remaining olive oil to the pan and heat the oil. When it sizzles, add the garlic and fry until light golden (this will only take 2-3 minutes). Remove the pan from the heat and remove the garlic from the oil on a paper towel with a fork. Place the olive oil used to fry the garlic in a small bowl. Now the rest of the mixed olive oil will be part of the dressing.
- Thinly slice the Spanish onion, add to the bowl.
- When the corn has cooled, remove the kernels with a knife and place in the blender jar.
- Add the cooled roasted garlic to your bowl.
