- Boil rice or barley (I used a rice cooker)
- While the rice is cooking, roast the pumpkin seeds. After frying, place in a bowl and pour over soy sauce, mix and allow to cool.

- Mix all the ingredients with rice and half pumpkin seeds. Transfer to a serving platter.
